Recipe for Mum...
Our zesty lemon cake!
INGREDIENTS:
For the cake:
- 300g apple sauce
- 55g Complete by Juice Plus+ Vanilla
- 80g spelt flour
- 15g baking powder
- Grated peel of an organic lemon
For the cake decoration:
- 2 organic lemons
- 2 tbsp lemon jam
- 4 tbsp of water
METHOD:
For the cake:
- Preheat oven to 190 degrees.
- Mix all ingredients to create a smooth batter.
- Pour the batter into greased springform.
- Bake for 45 minutes.
- Use a toothpick to check if it’s done.
- So that the cake does not start to burn, cover it after 15 minutes.
- Let the cake cool in the form.
For the decorations:
- Wash 3 Lemons in hot water.
- Cut into thin slices.
- Warm the jam in a pan and add the water.
- Caramelise the lemon slices briefly on both sides.
- Use the lemon slices to decorate the cake.
- Finally allow to cool completely
